The Ultimate Summer Sambo

We’ve all been on Ryanair when somebody takes the last cheese and ham toastie when you’re flying back from an exotic location and all you want is a cup of tea and normality. So, when you get back home, here’s an idea to beef up your humble sandwich and make you the hottie with your picnic on the beach – nothing wrong with picky bits but sometimes we all need something more.

I love the quote that there’s room for all God’s creatures between two slices of bread, because that gives licence for a sandwich to basically contain anything, but for now I’ve come up with this Galway take on a Muffuletta sandwich, which has multiple layers (we love it) containing thin sliced cold cuts, as well as whatever else you want to put in.

I’ve used sourdough (from the Hapi Bakery) because you need something substantial for these contents, but sourdough can be a bit unacceptable for sandwiches because it is chewy, so here we’ve hollowed it out. Then we’ve laced it with The Galway Kitchen pesto and houmous which will soften the sourdough, but not leave it soggy, because who wants a soggy sarnie?

You might need to bring two tops to this party, just be aware that this sarnie brings a risk of all that tastiness taking a tumble down the chin, but it’s a risk worth taking! For optimum taste and texture, prepare your sandwich, wrap it in a cloth and leave it in the fridge for a couple of hours before either bringing it to the beach, on a picnic anywhere, or for simply eating at the desk.

The ingredients I’ve used are listed below – feel free to judge your own preferred quantities. If you’re making this for kids who might not be fans of salami and chorizo, ham is perfectly acceptable. 

While we’re on the subject of sandwiches, I’m also a big fan of a basic toastie dipped into soup (you can’t do that on a Ryanair flight). Unless you’re going large with a Muffuletta style big one, without soup it’s like going to the party with your Spanx on but without your gown. Try it, you won’t look back! Whatever your favourite sandwich, enjoy wherever possible outside while we are having this extraordinarily good weather (cue rain….). 

Galway Style Muffuletta:

  • Sourdough loaf
  • The Galway Kitchen Organic Houmous
  • The Galway Kitchen Basil Pesto
  • Salami
  • Chorizo
  • Chicken breast
  • Red onion
  • Heirloom tomatoes (always seasoned).
