Stacked Beef Burgers with Pickled Red Onion and Pesto
- 680g Minced Beef
- 1 Tsp. Sea Salt
- ½ Tsp. Ground Black Pepper
- Your Choice of Oil for Cooking
- ½ a Red Onion Sliced Thinly into Rounds
- ½ a Lemon for Juice
- 150g of Mozzarella Sliced into Rounds
- 1 Large Tomato sliced into Rounds
- 8 Lettuce Leaves
- 4 Burger Buns
- 4 Tbsp of Pestle + Mortar Green Pesto
Put the sliced onion in a ziplock bag and squeeze in the lemon juice, seal and set aside to pickle for around 20 minutes.
Add the minced beef to a mixing bowl, add in the salt and pepper and mix it through the mince thoroughly. Shape the burgers in to 1 inch thick rounds.
Heat a frying pan with a small amount of oil, add the burgers and cook until they are golden brown, about 4 minutes on each side ensuring each one is cooked through.
Add the mozzarella on top of the cooked burger and grill until it is melted.
Stack the burger buns with the beef burger, lettuce, pickled red onions and sliced tomato. Spoon the pesto over the top of the burger, put the bun top on and serve immediately.
